Bereits seit 2015 finden unsere SOCIUS labore statt und im Anschluss gibt es jedes Mal ein exzellentes S\u00fcppchen von Denise N\u00f6renberg in der SOCIUS lounge<\/strong>. Bei Suppe und Getr\u00e4nken findet viel intensiver Austausch und gutes Netzwerken zu den Labor-Themen\u00a0 und dar\u00fcber hinaus statt.\u00a0<\/em>
Immer wieder wurden wir nach den Rezepten f\u00fcr die leckeren Suppen gefragt und endlich haben wir beschlossen, unser\u00a0Portfolio zu erweitern<\/strong>\u00a0und einen\u00a0Suppen-Blog-Kategorie<\/strong>\u00a0einzuf\u00fchren.\u00a0<\/em>

Zubereitung Thai-Pesto:<\/strong><\/p>\n

Das Thai-Basilikum, den Knoblauch, die Erdn\u00fcsse, das Sesam\u00f6l, den Reisessig, den Agavendicksaft, die Sojaso\u00dfe und den Limettensaft in den Mixer geben und zu einer cremigen Masse p\u00fcrieren.<\/p>\n

Mit Salz abschmecken und in ein luftdichtes Gef\u00e4\u00df (z.B. Einweckglas) geben. Das Pesto h\u00e4lt sich im K\u00fchlschrank bis zu 2 Wochen.<\/p>\n

Zubereitung Suppe:<\/strong><\/p>\n

Die Zwiebel, die S\u00fc\u00dfkartoffeln und die Mohrr\u00fcben sch\u00e4len und klein schneiden. Den Knoblauch und den Ingwer ebenfalls sch\u00e4len und fein hacken.<\/p>\n

Das Kokos\u00f6l in einen gro\u00dfen Topf erhitzen. Die Zwiebeln, den Knoblauch und den Ingwer hinzuf\u00fcgen und f\u00fcr 5 Minuten anschwitzen bis die Zwiebeln glasig sind. Nun die Currypaste und die Kaffir-Limetten-Bl\u00e4tter hinzugeben und f\u00fcr 2 Minuten mitbraten.<\/p>\n

Die S\u00fc\u00dfkartoffeln, die Mohrr\u00fcben, die Erdnussbutter und die Gem\u00fcsebr\u00fche in den Topf geben. Kurz aufkochen und dann bei mittlerer Hitze mit geschlossenem Deckel f\u00fcr 30 Minuten k\u00f6cheln lassen bis das Gem\u00fcse gar ist.<\/p>\n

Nach den 30 Minuten die Kaffir-Limetten-Bl\u00e4tter entfernen und die Suppe mit einem P\u00fcrierstab fein p\u00fcrieren. Nochmal kurz aufkochen und die Kokosmilch hinzuf\u00fcgen und eventuell noch mit Salz abschmecken.<\/p>\n

Die Suppe in eine Sch\u00fcssel f\u00fcllen und mit dem Thai-Pesto garnieren.
